Gardenburgers are good in a pinch, but if you have a little extra time why not make lentil walnut burgers with a yogurt, cilantro sauce? Here’s the recipe. We made them Friday night with some oven baked fries and coleslaw. They were very yummy. We’ve tried them a few times in the past, and always used the egg it calls for. This time I left the egg out and added an extra tablespoon of olive oil. It didn’t work as well. If you eat eggs, I’d go ahead and use it. Without it, the mixture didn’t really hold together well and crumbled around the edges when I cooked them. The photos below are from Friday night’s non-egg batch. They would have been prettier if we’d used the egg, but they still tasted great.
The oven fries are easy too:
Heat the oven to 400 degrees
Scrub a medium sized potato
Cut it length-wise into wedges
Put the wedges in a large bowl and toss with a couple of tablespoons of olive oil
Add a little coriander and black pepper
Make sure the flat side of the potatoes are touching the surface of the pan
Cook them for about 30 mins, flipping halfway through once they become brown.
Enjoy!
- Cook the lentils
- This is how it looks before you add the lentils
- After you add the lentils and blend
- Make the patties
- Make the yummy yogurt sauce
- Grill them up. As you can see mine are kind of falling apart becuase I didn’t use egg.
- Eat and enjoy!
